In the picturesque village of Zovello, at the foot of the spectacular Monte Zoncolan, our small artisan workshop is a place where the skilled hands of our expert craftsmen work with passion and dedication, using only the finest local products to create our beloved cjarsons, strictly following the rigid rules of tradition. For years, we have passed down the culinary tradition of our grandparents in Zovello, our Carnian village located at 921m altitude on the pristine Alps of Friuli Venezia Giulia. That's why we wanted to highlight this feature in the company name, "921 Zovello." Our mission has always been to make our typical and quality Made in Carnia products known. The ingredients we use are grown directly by us, on our land, without pesticides and entirely naturally. We like to mix and combine herbs and spices with potatoes and fine local flours.
Our commitment to quality and authenticity is reflected in the very name of the company, "921 Zovello," which celebrates our deeply rooted local identity. Since 2019, we are proud to be part of the regional PPL project (Piccole Produzioni Locali), an initiative that promotes and enhances the typical and high-quality products Made in Carnia.
The cheeses, ricottas, and butter are produced with fresh and selected milk, coming from cows raised naturally and freely, now in alpine pastures. The result is a unique, authentic, and unmistakable taste. Every bite will take you on a sensory journey through the scent of mountain pastures and the rich, creamy flavor of handmade cheese.
